Vinification The amontillados come from an excellent Fino, when then undergoes an additional oxidative ageing when it no longer continues to feed the flor yeast, which dies. This subsequent ageing is the same as the process for the Olorosos. This wine comes from the soleras of the wine cellars foundation (it is the meaning of its name).
Tasting Notes
Colour Mahogany.
Nose Great aromatic intense, nuts notes and long ageing.
Palate Elegant, complex and persistence, an explosion of different flavors (walnuts and hazelnut).
