Vinification Made from a biological rearing (under a blanket of flor) for more than four years in American oak casks by means of a solera system with regular “sacas and rocíos”. Our finos don’t need to be fortified as we reach the 15 ºC alcohol through fermentation with the Pedro Ximenez must.
Tasting Notes
Colour Pale straw in colour.
Nose Fresh, yeasty, crusty-bread nose with notes of salty almonds..
Palate Clean and tangy with a refreshing finish and a softness which makes it delightfully easy to drink.

Food Pairing Perfect as a chilled aperitif, accompanied by “tapas” of olives, shellfish, ham, cheese, fish, snacks or sushi. It is one of the rare wines which will happily partner dishes containing vinegar.
