---|---|
D. ORIGIN | Montilla-Moriles |
VARIETY | 100% Pedro Ximénez |
VINIFICATION | The 3 Miradas project represents a search for the expression of a terroir historically known as Sierra de Montilla. This wine has been made with Pedro Ximenez grapes from old bush vines, from different plots of the Riofrío and Ladera de Benavente areas.
The grapes were directly pressed and then fermented in the traditional concrete jars, tinajas, of 300@ (4800l). After the fermentation the wine stays in tinajas for 8 more months (or until the following spring) under “velo de flor” (natural yeast layer). |
